Way before the viral Dubai chocolate trend, these pistachio stuffed dates have been my go-to guilt-free sweet treat. While they’re not as decadent as their kunafa filled counterparts, these pistachio-stuffed, chocolate-drizzled dates are the perfect dessert canapé for a party, and a great healthy alternative for when your sweet tooth demands satisfaction!
Ingredients:
• 50g - 75g chopped pistachios
• 1 tbsp honey
• 8-10 dates
• 4 squares dark chocolate (about 50-60g melted)
In a pan, dry roast the chopped pistachios until you get a nutty aroma from them. Lower the heat slightly, and stir some honey in, clumping the pistachios together. Once the honey is mixed in well, take the mixture off the heat, and leave aside to cool a little.
Start to pit your dates (watch my video for an easy way of doing this), and once the pistachios have cooled, fill them into the pitted dates.
Leave the stuffed dates in the fridge for 10 to 15 mins. Melt your dark chocolate, take dates out of the fridge, and drizzle the melted chocolate onto the dates. For a more decadent treat, cover the whole date in chocolate (you will need a larger quantity of chocolate for this), and leave to set in the fridge for 30 minutes.
