Flu season in the winter, and allergies during spring and summer– there’s always something or the other clogging up our sinuses, and nothing is more comforting and clarifying for them on a sick day than a hot bowl of spicy soup. This vegan noodle soup is quick and easy to make, while packing in a ton of flavour, and using ingredients that will help open up your blocked pipes. 

Ingredients:

•⁠  ⁠1/2 onion 

•⁠  ⁠1 spring onion (optional) 

•⁠  ⁠3-4 cloves garlic 

•⁠  ⁠Thumb size piece of ginger 

•⁠  ⁠Veggies of choice (I used broccoli and mushrooms) 

•⁠  ⁠2 tbsp Gochujang or Siracha or chilli paste 

•⁠  ⁠Sesame oil

•⁠  ⁠⁠1 tbsp Peanut butter (optional) 

•⁠  ⁠⁠1 tbsp Soy sauce 

•⁠  ⁠⁠1 tsp Rice vinegar 

•⁠  ⁠⁠Rice noodles 

Sauté chopped ginger, garlic and onion in a bit of sesame oil for 2 mins, add in around 600-700ml of water and bring to a boil. Add in the chilli paste/sauce of choice, Peanut butter (optional), soy sauce, salt and stir well. Add in your veggies and vinegar, cover and cook for 10-12 mins. Spoon over boiled rice noodles and garnish with chopped spring onion before serving.
