Recipe:

  • 1/2 onion
  • 1 clove garlic
  • 1 jalepeno
  • 80-100g rice
  • 200-250ml water
  • 1 tbsp tomato paste
  • Vegetable stock cube (optional - try and use one with no preservatives or additives)

In a pot start to sauté the onions, garlic and jalapeños in a bit of oil or butter. Once the onions start to get translucent, add in your washed rice and sauté for another 1-2 mins. In a jug mix the tomato paste and stock cube with a pinch of salt into water. Pour the tomato water into the pot with the rice, and cook for around 10 mins (until rice is cooked and fluffy).
